Inspiration from the Dark Recesses of My Pantry

Chicken with Brown Butter, Lemon and Capers

I had a roasting chicken in the fridge and wanted to do something different. Before I knew what I was doing, I was taking a knife to the formerly feathered fowl and butchering him into halves, forgoing my usual whole roast chicken. I had decided to brown the halves and finish them off in the oven. While it was browning, I began rooting through the  dark recesses of my pantry looking for flavorful additions that I could add. Surely the makings of a glaze or sauce were in there somewhere …

I was not to be disappointed. Digging deeper,  I found a jar of capers. As I held it in my hand and pondered, I was reminded of a skate dish I had a few months ago. It was served with a brown butter, lemon and caper sauce and was out of this world. In fact, had the meal not been a business dinner, I would have licked the scrumptious sauce off the plate.

Not unlike my skate dish, tonight’s chicken dish with brown butter and lemon caper sauce was equally delicious, entirely worthy of a tongue lapping. It was so good, that as I grabbed my camera to photograph my husband’s plate, he threatened to remove my arm if I didn’t hurry my photo shoot so he could dig in! With my son laughing and thoroughly enjoying his first bites at my husband’s expense, I couldn’t have had better compliments!

    Sounds easy enough to make on a week night too, when time is hurried b/c of work and gym.
